• During mashing, coarsely ground barley malt undergoes hydration with water at different temperature-time regimens, which aids in the breakdown of starch molecules into moderate carbohydrates, bringing a balanced combination of carbohydrates and proteins. At the washing stage, all soluble solids from barley malt are extracted avoiding the hard and astringent components from the barley malt husks, leaving a wort. The extracted wort is boiled along with hops which add a hoppy aroma and bitter taste to the malt extract. Malt extract is stable and sterilized during boiling.
